Yes the jig will hold most 1/4" chisels. Bevel angle needs to take into account the type of steel the chisel is made from as well as they type of work the chisel will be doing. For most general purpose applications either 25* or 30* will work well. If you do not have a specific preference I would recommend using which more closely matches the existing bevel on your chisels and go from there.
