The In-between grits are for flattening and polishing the back of the tool. We talk about this starting at 2:28 in the video above. When creating a micro-bevel, you can jump straight to your highest grit because very little material is removed at the very tip of the cutting edge. If you are sharpening plane irons with a camber you will also find the additional grits helpful.
