Switching between 25* and 30* is easy. The black slide that holds the sharpening stones will slide off of the base allowing it to be reversed. When needed for one angle or the other.

Answer: Unfortunately we do not have a sharpening system dedicated to sharpening carving tools.

Question: Will the fast track sharpen my dog grooming, clipper blades? I have Oster dog grooming clippers.
Answer: I don't believe this would work on clippers. Clippers do not have a beveled cutting edge like a chisel, so this sharpener would not be sharpening in the correct place.
